For the past couple years, ever since Chronic Fatigue flattened my life into a pattern of sleeping and more sleeping, I’ve tried to eat healthier.
To understand what that means, I’ve read a bunch of books about where our food comes from, about the typical American diet, and about how to prevent cancer, autoimmune diseases, and chronic fatigue.
Here’s a summary of those books (specifically my favorites by Michael Pollan):
1. The current American diet is filled with lots of corn and processed foods that are making us sick.
2. Fresh plants are really good for you.
3. We should all try to eat a bunch more plants.
Perhaps the hardest part of Pollan’s advice is the last part, eat mostly plants. Because do you the opposite of what hungry kids and cranky moms crave? Mostly plants.
I’m actually sort of convinced we crave corn and soy lecithin more than plants.
But fresh plants can help precent everything from cancer to another life-flattening round of chronic fatigue.
The question is how to add a bunch of plants into our diets.

Breakfast Smoothie (add ingredients in order listed)
Almond or coconut milk (fill it up to just above the blades)
Handful of coconut (for flavor and fiber)
1 tablespoon flax seed (for omega-3 fats and fiber)
1 tablespoon chia seed (for fullness and fiber)
1 tablespoon pecan butter (for protein and flavor)
Half an avocado (for creaminess, beta carotene, and potassium)
Two big handfuls of spinach (for antioxidants and vitamin C)
Honey (for flavor, because this is A LOT of plants)
Handful of ice
Blend together for about 30 seconds.
Drink a whole bunch of plants for the day. Before the sun is even up.
Sweet Breakfast Smoothie (For Kids)
Orange juice (fill it up to just above the blades)
Handful of coconut (for flavor and fiber)
1 tablespoon flax seed (for omega-3 fats and fiber)
1 tablespoon chia seed (for fullness and fiber)
Half an avocado (for creaminess, beta carotene, and potassium)
One handful of spinach (for antioxidants and vitamin C)
Frozen Pineapple (for vitamin C, fiber, and flavor)
Handful of ice
Blend together for about 30 seconds.
Give your kids a whole bunch of plants for the day. Before the sun is even up.
